Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 3-4 tortillas (corn or flour)

Toppings

  • Diced avocado
  • Lime wedges
  • Diced red onion
  • Fresh lettuce
  • Shredded red cabbage
  • 1/3 cup ranch dressing

Instructions

  • Cook the Shrimp: Heat a skillet over medium-high heat and add the olive oil. Once hot, place the shrimp in the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Sprinkle with chili powder, garlic powder, and a pinch of salt and pepper. Remove from heat and set aside.
  • Warm the Tortillas: While the shrimp is cooking, warm the tortillas. You can do this in a separate skillet or directly on a grill. Heat each tortilla for 30 seconds on each side, just until they're soft and pliable.
  • Assemble the Tacos: Place a few shrimp in the center of each tortilla. Then, top with fresh diced avocado, red onion, a squeeze of lime juice, lettuce, and shredded red cabbage. Drizzle with ranch dressing for an extra creamy touch.
  • Serve and Enjoy: Serve these tacos immediately while they're warm, fresh, and full of flavor. Perfect for a light dinner or as a fun party dish!
